Mukoy's Lavash
лаваш Муко · Մուկոյի լավաշ
Mukoy's Lavash makes and sells lavash, the thin flatbread that's a staple of the Armenian table, at its bakery in Gyumri. The dough — flour, warm water, sourdough starter, and salt — is kneaded, left to rise, shaped into 100-150 gram balls, then rolled out to sheets 3-4 mm thick before baking.
The business says its lavash is baked only in a clay tonir (a cone-shaped clay oven built into the ground) and made without additives or preservatives, following a method it describes as unchanged over time. Michael Mkhitaryan is listed as director.
Mukoy's Lavash is in Gyumri, in Shirak region, roughly 88 km northwest of Yerevan in a straight line.
